Also known as 'witlof', 'chicory' or by the French as 'endive'. A crisp pale vegetable is rather bitter. Versatile in cooking it can be eaten raw in a salad, blanced then wrapped in streaky bacon covered in grated cheese and then grilled in the oven. Other methods include stir frying or using the long boat shaped leaves as ediable serving dishes. Grown hydroponically all year round.
